Get your favourite Shahi Paneer right, every time!

A dish that is one of the most ordered in Indian restaurants, and a staple in Indian celebrations, be it weddings, birthday parties or festivals is Shahi Paneer. Soft succulent paneer cubes in a rich, thick, aromatic gravy, this dish is truly majestic and does full justice to its name (Shahi means ‘Royal’). No wonder then that it’s loved by vegetarians and non-vegetarians alike and is immensely popular across people of all age groups.

Many North Indian restaurants become extremely popular if they nail the preparation of this dish with their signature style. Customers flock to such restaurants to savour the taste of the Shahi Paneer gravy. However, food service restaurants across the country often struggle to maintain the flavour and consistency of Shahi Paneer, throughout the year.

This is largely because of the seasonal inconsistencies in the flavour and colour of fresh tomatoes, the key ingredient that lends this dish its Royal taste. Tomatoes, when perfectly cooked with onion paste give this dish its distinct tangy flavour, thickness and that perfect red colour. Hence, choosing the highest quality tomatoes is integral to the final flavour of the dish. However, as the quality of tomatoes varies with season, maintaining the flavour of the dish becomes a challenge to chefs.
