A Delightful Journey into the World of Tomato Sambar

Tomato sambar is a traditional South Indian dish whose recipe differs from region to region. However, it acts as a comfort food for people from all over the country. Ingredients for tomato sambar :

  1. Kagome’s Pulpy Crushed Tomatoes
  2. 1 small onion, finely chopped
  3. 2 green chilies, slit lengthwise
  4. 1 small carrot, chopped
  5. 1 small potato, chopped
  6. 10-12 shallots,  peeled
  7. 1 tablespoon tamarind paste
  8. 1 tablespoon sambar powder
  9. 1/2 teaspoon turmeric powder
  10. 1/2 teaspoon mustard seeds
  11. 1/2 teaspoon cumin seeds
  12. A pinch of asafoetida (hing)
  13. A few curry leaves
  14. 2 tablespoons oil
  15. Salt to taste
  16. Fresh coriander leaves for garnish

Instructions:

  1. Rinse the toor dal well and pressure cook it with 2 cups of water until soft and mushy. Set aside.
  2. In a large pot, heat oil over medium heat. Add mustard seeds and let them splutter. Then, add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds until aromatic.
  3. Add the chopped onions and green chilies to the pot. Sauté until the onions turn translucent.
  4. Now, add the pulpy crushed tomatoes, carrot, and potato. Cook for 2-3 minutes until the vegetables start to soften.
  5. Dissolve the tamarind paste in 1 cup of water and add it to the pot. Mix well.
  6. Add sambar powder, turmeric powder, and salt. Stir everything together and cook for another 2 minutes.
  7. Pour in 3-4 cups of water and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15-20 minutes until the vegetables are fully cooked.
  8. Mash the cooked toor dal and add it to the pot. Stir well to combine.
  9. Continue to simmer the sambar for another 10-15 minutes, allowing the flavors to meld together. Adjust the consistency by adding more water if needed.
  10. Garnish the tomato sambar with fresh coriander leaves.
