Ingredients for Aloo Tomato Curry

  1. 2 large potatoes, peeled and diced
  2. Kagome’s Crushed Tomato
  3. 1 onion, finely chopped
  4. 2 cloves of garlic, minced
  5. 1-inch piece of ginger, grated
  6. 1 green chili, finely chopped (adjust according to your spice preference)
  7. 1 teaspoon cumin seeds
  8. 1 teaspoon turmeric powder
  9. 1 teaspoon coriander powder
  10. 1/2 teaspoon red chili powder (adjust according to your spice preference)
  11. 1/2 teaspoon garam masala
  12. Salt to taste
  13. 2 tablespoons cooking oil
  14. Fresh cilantro leaves for garnish

Instructions:

  1. Heat the cooking oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  2. Add the finely chopped onions and sauté until they turn golden brown. Then, add the minced garlic, grated ginger, and green chili. Sauté for another minute until the raw aroma subsides.
  3. Stir in the turmeric powder, coriander powder, red chili powder, and salt. Mix well to coat the onions and spices evenly.
  4. Add the diced potatoes to the pan and sauté for a few minutes until they are lightly browned. This step adds a modern twist by giving the potatoes a slight crunch.
  5. Once the potatoes are slightly cooked, add the crushed tomatoes.
  6. Reduce the heat to low, cover the pan, and let the curry simmer for about 15-20 minutes, or until the potatoes are tender. Stir occasionally to ensure that the curry doesn’t stick to the bottom of the pan.
  7. Sprinkle the garam masala over the curry and mix it in gently. This aromatic spice blend adds a burst of flavor and enhances the overall taste of the dish.
  8. Taste the curry and adjust the seasoning if needed.
  9. Once the curry reaches desired consistency and the flavors have melded together, turn off the heat.
  10. Serve the Aloo Tomato Curry with a modern twist hot, garnished with fresh cilantro leaves. It pairs beautifully with steamed rice, naan bread, or even as a filling for wraps or sandwiches.

Aloo Tomato Curry with a modern twist takes the beloved traditional Indian dish to new heights by infusing it with contemporary flavors and textures. This fusion recipe offers a delightful combination of spices, tender potatoes, and tangy tomatoes, resulting in a dish that will satisfy both your customers’ cravings for comfort food and their desire for culinary innovation.
