Ingredients for Ratatouille Dish Recipe:

  1. 1 eggplant
  2. 2 zucchinis
  3. 1 yellow bell pepper
  4. 1 red bell pepper
  5. 1 green bell pepper
  6. 1 packet of Kagome Tomato Puree
  7. 1 onion
  8. 3 cloves of garlic
  9. 3 tablespoons of olive oil
  10. 1 teaspoon of dried thyme
  11. 1 teaspoon of dried oregano
  12. Salt and pepper to taste
  13. Fresh basil leaves for garnish

Instructions:

  1. Start by preparing the vegetables. Peel the eggplant and cut it into 1-inch cubes. Slice the zucchinis into thick rounds. Remove the seeds and membranes from the bell peppers, and cut them into chunks. Peel and dice the onion. Peel and mince the garlic. 
  2. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they become translucent and fragrant.
  3. Add the eggplant to the skillet and cook for about 5 minutes until it starts to soften. Stir occasionally to prevent sticking.
  4. Next, add the zucchinis, bell peppers, and Kagome’s tomato puree to the skillet. Stir everything together and season with thyme, oregano, salt, and pepper. Reduce the heat to low, cover the skillet, and let it simmer for about 30-40 minutes. Stir occasionally to ensure even cooking.
  5. Once the vegetables are tender and cooked through, remove the skillet from heat. 
  6. Serve the ratatouille hot or at room temperature, garnished with fresh basil leaves.
