Mutton Rogan Josh Recipe- The Mughal Way

The traditional Mutton Rogan Josh originated in Persia but was brought to India by the Mughals and it particularly caught on in the Northern state of Kashmir. Ingredients for a classic mutton rogan josh:

  1. 500 grams mutton, cut into pieces
  2. 2 tablespoons vegetable oil
  3. 2 onions, finely chopped
  4. 2 tablespoons ginger-garlic paste
  5. Kagome’s  Tomato Puree
  6. 2 teaspoons red chili powder
  7. 1 teaspoon ground turmeric
  8. 2 teaspoons ground coriander
  9. 1 teaspoon ground cumin
  10. 1 teaspoon fennel seeds
  11. 4 green cardamom pods
  12. 2 cloves
  13. 1 cinnamon stick
  14. 1 bay leaf
  15. 1 cup plain yogurt, whisked
  16. Salt to taste
  17. Fresh coriander leaves, for garnishing

Instructions:

  1. Heat the vegetable oil in a large pan or pressure cooker over medium heat. Add the onions and sauté until golden brown.
  2. Add the ginger-garlic paste to the pan and cook for a minute, stirring constantly.
  3. Add the mutton pieces to the pan and cook until they are browned on all sides.
  4. Add the tomato puree to the pan and cook for 5 minutes, stirring occasionally.
  5. In a small bowl, mix together the red chili powder, turmeric, ground coriander, ground cumin, and a little water to make a paste. Add this paste to the pan and cook for 2-3 minutes, stirring well to coat the mutton evenly.
  6. Add the fennel seeds, cardamom pods, cloves, cinnamon stick, and bay leaf to the pan. Stir well to combine the spices with the mutton.
  7. Reduce the heat to low and add the whisked yogurt to the pan. Stir well to incorporate the yogurt into the sauce. Cover the pan and let it simmer for about 1-2 hours, or until the mutton is tender and cooked through. If using a pressure cooker, cook for about 25-30 minutes after the pressure has built up.
  8. Once the mutton is cooked, check the seasoning and add salt to taste. If the gravy is too thick, you can add a little water to adjust the consistency.
  9. Garnish the Mutton Rogan Josh with fresh coriander leaves and serve hot with steamed rice, naan bread, or roti.
