Desi Chana Masala Recipe to Update the Menu

INGREDIENTS:

  • 2 cups canned chickpeas, rinsed and drained
  • 1 cup Kagome Pulpy Crushed Tomatoes
  • 1 large onion finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger grated
  • 1 green chili, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 1/ teaspoon garam masala
  • ¼ teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish

PREPARATION

  1. Heat oil in a large skillet or pot over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown, stirring occasionally.
  3. Add the minced garlic, grated ginger, and green chili. Sauté for another minute until fragrant.
  4. Reduce the heat to low and add ground cumin, ground coriander, turmeric powder, red chili powder, cayenne pepper, and salt. Mix well and cook for a minute to toast the spices.
  5. Add the Kagome pulpy crushed tomatoes to the skillet. Stir well to combine the spices with the tomatoes. You can also use tomato puree as per availability.
  6. Increase the heat to medium and bring the mixture to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
  7. Add the canned chickpeas to the skillet and stir to coat them with the tomato mixture. If the mixture seems too dry, you can add a little water.
  8. Cover the skillet and let the chana masala simmer for about 15-20 minutes, stirring occasionally. If the mixture becomes too thick, you can add a bit of water to adjust the consistency.
  9. Once the chickpeas are tender and well-cooked, sprinkle garam masala over the dish and give it a final stir.
  10. Taste and adjust the seasoning, adding more salt or spices if desired.
  11. Remove from heat and garnish with fresh cilantro leaves.
